Some materials never trade on the auction house — raid-only loot, quest items, anything too new. They have no market price, so any craft consuming them shows as unpriceable rather than silently costing nothing. Give them a value here and those crafts start ranking. A manual price always overrides the API.
For items you can't buy at all, only trade for — e.g. a programmable processor plus an orange gel gives 4 titanium alloys. Record the trade and the unit cost is worked out from live prices, so it stays right when the inputs move. Beats a manual price, which is correct exactly once.
